    This weekend's brisket turned out ok, not as tender or juicy as I had hoped, but the flavor was good.   I think some of the issues were that it was really lean, so not much marbling to render.   I probably should have trimmed less closely and injected more than usual to compensate.   It also came from Restaurant Depot with an inexplicable cut 5" long clear through the middle of the flat.  Wrapping at the stall, instead of after, may have also helped it retain more liquid.  But, temperature control was spot-on, minimal fluctuation from 260 F for 17 hours, I pulled at 203 F internal, wrapped it in a towel and put it in the empty ice chest to rest, and served it about 3 1/2 hours later, when the internal temp was 164 F.   I also liked the new rub variation.   And the poppers, as always, were spectacular.

     

    Wrapping at the stall, new butcher paper during the rest and beef tallow at wrap and rest both add to the juicy quotient.

    I keep improving marginally every time, but good flavor is good flavor, so you won!

    It's not a rugpull because he says it's not!  LOL.  That's the irony of it.  I actually believe this guy :).

    It's $100, the worst that happens is I'm rugged to $10 because of the way he pegged liquidity.  I've burned up $100 in ammo in an hour without a second thought, so I'll gamble on this one too!

    You have to understand the goal here.  The goal is not to get a landlord to pay taxes and such.   The goal is to get rid of THAT landlord and replace them with one that is favored by the politicians.   

    Remember that statement out of the World economic forum?  "By 2030 you will own nothing and be happy" ?

    If you don't own it, who does?  Their "strategic" partners.  These same partners line the pockets of the politicians.  Big money, deep pocket, mega corporations, many located in tax havens.

    How do they(blue state governors) transfer ownership of your property to them, specially income generating properties?

    They drive your income to zero on the property, force you to either pay the taxes out of pocket or surrender the property at fire sale prices.  Which will most do?  They will hand over the keys and walk away.  

    Mega bucks corp walks in, buys up the rental units, pays the back taxes and starts charging rent again.  It is at this point that the "moratorium" on rents will disappear and goon squads will be on hand to move out anyone who isn't paying.

    I wrap with butcher paper at the stall, usually around 165.  Looking for pooling, proper bark, etc.

    Pull at 203.

    Unwrap after pull, wait until 185.   

    Re-wrap with new paper, add tallow and place in cooler.

    Wait :)

    Ok, It was 3 weeks ago that we accepted an offer on our NJ house but we became residents of Florida on the 12th of April.

    All my full caps mags and I were reunited as I exiled them to my sister's place in FL right as the law changed.   I gave them all hugs and stroked them for they were very patient waiting for daddy to come home.

    I've got a 14.3 lb brisket that is going on the smoker in a couple of hours.   I trimmed it and injected it (beef broth) early this morning and it has been marinating ever since in beef broth with some cider vinegar, olive oil, garlic, and onion powder.   By 6:30 I'll have it rubbed with a black pepper/kosher salt mix containing also some garlic and onion powders and cayenne.  On smoke over oak/hickory by 7:30 or 8, then begins the long night of babysitting the WSM smoker.   I should be able to pull it to rest by mid-afternoon tomorrow, for an early dinner.

    It should be a fine kickoff to the July 4 weekend.

    Just for what it's worth, I've tweaked a little bit and improved.

    I have always wrapped for the rest.   What I was not doing was waiting long enough for the wrap.  I want an internal temp of 185, then wrap with tallow and rest at _LEAST_ 3 hours in a good cooler.  If the internal temp gets below 140, put in oven at 150.   It's critical that you don't wrap too soon, it really has bumped it up a notch in juicy.

    I don't understand why anyone would use Robinhood in the first place.  What's so special about it?  There's nothing there that I can't do with Vanguard or Ameritrade or one of the others.  Because it's an App?  Low/no fees?   They started forcibly liquidating people when the hedgies needed liquidity.   You couldn't buy.   I would have been out of there the next moment.

    A friend had an early 90s Bronco.  The full sized deal.  What a rusty pile of garbage.  I hope by now it's made it over to china and been recycled into rubber dog shit and dildos.   I can't image the pain someone would have if they still had to deal with that piece of junk.  Hell, my 2004 Dodge Ram 2500 didn't rust nearly as bad as that Bronco!

    My dad had an 86 Bronco II.   It got flopped twice.  My step mother flopped it on the driver side, got it fixed and about 2 months later my step brother flopped it on the passenger size.  My dad bought these huge tires for it with these spongy super tall sidewalls.   The steps were from the city, didn't have a clue how to drive and it showed.

    I have been greedily buying up shitcoins!   I upped my stake in Dogelon from 200,000,000 tokens to just about 1,500,000,000.  You can buy it on Kucoin now instead of uniswap.

    I did also buy a little bit more safemoon just to get my numbers even up.

    I bought 500 billion Rocket Bunny tokens for like $25 on uniswap.  It's a cool deflationary token and every time I look, my quantity of tokens is higher.  Of course they did start out with 777,000,000,000,000,000 tokens, so there's a _LONG_ way to go to get rid of some of these zeros.  In a few years, it could deflate half a dozen zeros and turn into some real money.

    When the market turns around, all of these tokens, which are run by decent dev teams, should remove a few zeros from the right of the decimal point.  

    I also have been dollar cost averaging into BTC so I'm sorta buying all these dips and drops.  I did up my stake in Cardano too.

    Just for what it's worth, I have less than $250 in all my shitcoins purchases, so it's not like I'm really gambling real money.  Feels a bit like a lottery ticket so it's fun to watch.  Shrug.

    It a nice lifestyle for sure.  Great social scene.  A lot of nice people.   I’m not quite ready for it though. Still have a lot of welding to do!

     

    Ah, Arruda Terrace.   Villa complex just off of 466.  I pass there every time I go to Sumter.  It's about 5 minutes from the new house and a little more from the other place.  Escobar is kind of a barren area.  Needs more landscaping but still there is no real bad place down there.

    I wish I had a place to wrench on a  car, but ah well, next life I guess.  I"ll settle for cart rides and no snow.

    When I do get something 450HP or more, I'll just get a sticker "Bought, not built"

    The band was 80’/90s pop and disco. So not my favorite but they actually did some Prince really well.  

    As you wrote, its a neat place.  It took a couple of days for me to get my bearings but its big like you said.  And pretty much whatever kind of retail place you can think of....is there somewhere.  And its clean as hell.  I suppose there are some homes that aren’t kept up but I didn’t see any.  It looked pretty much like a 200 square mile resort.

    You were at Spanish Springs.  It's about 1/4 mile from my first Villa.  A 5 minute cart ride.  We often run over for Ice cream.   Our second villa is directly between Sumter landing and Spanish Springs.  Sumter landing is the square against Lake Sumter. 

    I'm always with my wife and I don't drink, so I'm not running into the drunk floozy types :).  

    I hear about people having the occasional run-in with someone, but I've never seen any of it.  It's always smiles and friendly folks.

    There really aren't any homes that aren't kept up.  There is sometimes one where the resident died with no next of kin and it goes fallow.  It takes a while for all the paperwork and such and often a neighbor will mow and do weeds.  It looks like Suburbia around 1950.  There are no punks, block parties, thump thump rap cruisers or any other nonsense.  There are sometime adult children who are drunk, drug addled fuck-ups who live with their parents.  They tend to make the paper when they get arrested for the 20th time.

    Heck, you can't even park a 1ton truck on your property for more than 72 hours!  The covenants are pretty strict, but it's fine.  I'm not worried about leaving a junker in the front yard and I don't have to worry about the neighbor doing it either.  If that's your thing drive 10 minutes outside TV, there's as much red-neck, chain link fence, junk yard dog, abandoned car, no zoning as you can handle.

    For me, it's nice to hop on the cart, drive to the rec center, swim, shoot pool, play pickle ball, or bocci or whatever.  After that we can cruise over to the square, listen to music, eat ice cream, get dinner and go home to our quiet neighborhood.

    It's not for everyone, but it's a narrow band of people that it misses.   If you want your own shooting range and you like to weld on sand buggies in your 5 car garage, it's not for you.

    I bought 10 shares of AMC Tuesday for $30.50.   Yesterday they went up to over $60.   Today it should go up to $100.

    Once the short squeeze is triggered, Lambo soon ;)

    I also put in for 2 more shares last night with a market limit order of $72.80.    That number is simply what I have available in my settlement account.

    There is going to be a forensic audit on this stock due to the amount of naked short selling.  This will put further upward pressure on this stock.   $100k is not going to happen.   $500 is entirely possible though.

    If you've got some gambling money, you might still be able to catch the ride up.   I don't believe the short-squeeze is triggered yet.  Once that happens though, it's going to be fun to see hedge billionaires squeal.

While as in any county one can find cases of STDs, The Villages is in no way a top place for sexually transmitted diseases. In fact, looking at statistics from the Florida Department of Health, it is at the bottom for cases per 100,000 residents. In 2019 the State’s overall rate of infection for gonorrhea was 175 per 100,000 population. In Sumter County, where 80% of the population is from The Villages, the infection rate is 39. That contrasts with Leon County, home to the capitol and Florida State U., where the rate is 370. Similarly for rates of chlamydia, the overall rate for Florida is 525.5 while Leon County’s is 1147 and Sumter’s 157.

    That rumor started from one comment by one fluzy who claimed it, then it got amplified in Rolling stone and then turned into legend and  now it's lore.  You can't understand how annoying it is that every time you mention TV, someone googles it, up comes the "It's an epicenter of STDs and black market for Viagra" nonsense.  No need for a black market in it, you can get Viagra online by a dozen different places like Roman, Blue Chew, for hims, etc.  The only reason I know those is they have at one point advertised on Cumia.  The only other comment I'll say about that is that in men over 50, half have some level of ED, the other half are lying about it.  I guess it goes to show how OLD that article is.

    Then again, who cares.  It's a bunch of older folks.   Single men never have to cook again and can be perpetually drained if they choose to.  A little wrinkled and dry maybe, but what are ya gonna do.

    We own two house in The Villages.   One is a house we rent, but we're currently residing there while we renovate the other one.  If you don't know what The Villages is, it's the world's largest retirement community.  35 miles top to bottom and about 12 miles wide.  All golf cart accessible.  There are at least 50 golf courses, neighborhood rec centers everywhere, pools, nightly entertainment, on and on.    A round trip on the cart from the top top to the bottom will run you most of a day and you pass through a ton of neighborhoods.    It's a neat place.

    I also now own 3 golf carts.  One stays with the rental when it's rented and the others are for the wife and me.

    I want to get a street legal one that can still run on the multi-modal paths.  

    Can't wait to get this house sold.  I hope we get a bidding war ;)
