I did the same with a five pounder my wife picked up the first day of the sale. Sliced into one inch steaks for pan frying, then trimmed the ribs and seared, then braised em.
I was not terribly impressed with the meat's flavor, but it was very tender.

That's an important clue. She may have used self rising flour that is higher in protein and already has baking powder in it and added the soda for additional rise. That's important because different flours give different textures and chewiness.

Can you describe the cookie in more detail. was it baked or a no-bake recipe? Was the icing store bought or home made, was the cookie spiced, was it buttery. Were there chocolate chips, nuts ect. Have you ever watched her make them?
If you can give me an accurate description, I can probably reproduce it, or at least come close. I can bake like a motherfucker, it's a hobby I probably take more seriously than I should.
I have to warn you though, even if you found the recipe it may be impossible to perfectly duplicate it. Sometimes a recipe can't be reproduced because nobody can make those cookies like your g'maw.

If you end up getting a WheelyBird, fret not, they are very durable, my Do-All Flyway has not had a problem in 5000 throws. Because of the violent shaking, you will have to preform PM or just tighten stuff up as it gets out of spec. The foot switch does need looking after, they eventually loosen up and should be checked before each use.

You don't need a special knife if you are doing it only occasionally, but you do need a sharp blade. I used an extremely sharp Japanese kitchen knife .
