I thought it could be used to make agar, which is useful for all kinds of things...but after looking it up, that is made from a different kind of seaweed. Sargassum can be useful as animal feed; people eat it too, but not in sufficient quantity to make a dent. And as @Fred2 noted, it can be dried and used as fuel.
