I bought mine a Franchi Instinct Catalyst in 12 gauge (designed for women).  She loves it and was able to break clays with it first time shooting it.

Has she had any formal training? Perhaps a class that both you can enroll in together? Shotgun, rifle, or a CCW class, which would be ideal if you travel out of state.

A few years ago I got my wife a pair of yaktraks so she doesn't slip and fall when she shovels the driveway. 

She's due to get a new snow shovel this year and a snobrum so she can clean the cars too.

Take notes throughout the year of things she's likes but doesn't want to buy herself normally. This year I purchased one of those Fuji instant cameras, some bath bombs and something other that was little that I am forgetting.
