If you absolutely INSIST on pineapple with meat, at least make my Tacos Al Pastor...

Marinated, grilled (or smoked) pork tenderloin, chipotle slaw, grilled FRESH pineapple, and pickled shallots.

Make a Kitchen Sink

Mix the appropriate amt Italian bread crumbs with the meat. And some egg as binder.

Roll it out flat and open the fridge and pantry doors.

Spread your choice of fixins (on hand) and roll the baby up

Load into loaf pan and bake as usual.

Makes for some interesting combinations!

Pfffft.  No.

Actually I'm just just mixing everything up,making the sauce and putting it in the fridge to be cooked tomorrow night.  

Haven't decided yet it if I'm cooking it on the grill or in the oven tomorrow.
