Pandemic - Recipe Thread...

Simple recipe I like to make from time to time....in fact, it was last nights dinner. 
 

Arroz con pollo. 
 

Chicken( I use thighs), onion, peppers, garlic, sofrito, and a little chicken broth. Simmer this all down. 
Serve over yellow rice, maybe some tortillas, and refried, or ranch beans on the side.

Easy enough. I cook by feel, so these proportions are a little rough.
 

Arroz con Pollo

For the chicken:

1lb boneless/skinless chicken (breasts or thighs) cut into chunks.
1medium red onion, roughly diced. 
1 medium red or green bell pepper, seeded, and roughly diced.  
2tbs minced garlic. 
3tbs red sofrito.  (One of the few things I have in my kitchen in a jar...I use Goya). Or, you can make your own. 
1/4 cup chicken stock.

brown off the chicken in a skillet, once cooked through, drain and set aside. In the same pan, cook the onions/peppers until softened, add garlic, sofrito, and stock. Add chicken back to skillet and simmer on low heat. Season to taste with s&p. 

Cook 1 cup yellow rice with 2 cups water or stock. You know how to cook rice. Lol
 

When rice is done, plate the rice and cover with chicken mixture. 
 

Serve with flour tortillas, refried or ranch beans. Garnish with cilantro, and if you like, a little cojita cheese.

This will get you started.

 I modified my recipe  I add two peppers a whole small onion    I use minced garlic.

I mince the onions and peppers , Its easier to work with. The key is to use pie crust. 

Its not a dumpling . Its like a pastry they are fukin  delicious

Silly rabbit, pie crust is in the baking section.  That's where the flour and lard is.  You buy it when you are ready to make it.  That must be what you mean by ready made.  Syntax is a little messed up, but I get it now.

 Nope its near the butter in the dairy section.  Must be refrigerated
