Chicken( I use thighs), onion, peppers, garlic, sofrito, and a little chicken broth. Simmer this all down. Arroz con Pollo For the chicken: 1lb boneless/skinless chicken (breasts or thighs) cut into chunks. 1medium red onion, roughly diced. 1 medium red or green bell pepper, seeded, and roughly diced. 2tbs minced garlic. 3tbs red sofrito. (One of the few things I have in my kitchen in a jar...I use Goya). Or, you can make your own. 1/4 cup chicken stock. brown off the chicken in a skillet, once cooked through, drain and set aside. In the same pan, cook the onions/peppers until softened, add garlic, sofrito, and stock. Add chicken back to skillet and simmer on low heat. Season to taste with s&p. Cook 1 cup yellow rice with 2 cups water or stock. You know how to cook rice. Lol When rice is done, plate the rice and cover with chicken mixture. Serve with flour tortillas, refried or ranch beans. I mince the onions and peppers , Its easier to work with. The key is to use pie crust. Its not a dumpling .
